That mode of business grew unsustainable. At the time, her young son Noah was growing up and getting more playful, and she needed a separate space to bake. That led her to a spot in San Juan, La Union, where Masa as a physical bakery was born. Apolonio eventually added coffee and hot meals to the menu.
