Veggie Frittata

MANILA, Philippines — Breakfast is the most important meal of the day, and eggs are a power-packed food that fits into the demands of a power breakfast perfectly. This is why fried egg, scrambled egg, Eggs Benedict, omelet, and frittata are an important part of breakfast.
The Veggie Frittata whipped up by Mama Sita’s marketing executive and weekend kitchen warrior Ces Nepomuceno-Gamad is a good dish to start the day with.
Finding some week-old eggplants in the kitchen, Ces initially thought of making Tortang Talong. But then she remembered that shew also had leftover blanched broccoli from making braised vegetables a few days earlier. So, to be able to make use of both ingredients, she made Veggie Frittata instead.
Veggie Frittata
Ingredients:
3 pcs medium-sized eggplants, grilled or roasted
1 pc. red onion, chopped
50 grams ground beef (optional)
6 medium-sized eggs, beaten
5 pcs. broccoli florets, blanched, sliced
1/2 pc. red bell pepper, cut into strips
1/2 cup fresh milk
2 tbsps. cheddar cheese, grated
Salt and pepper
Procedure:
1. Grill eggplants by putting them directly over fire until the skin partially blackens and the meat of the eggplant has softened. Once cooled, peel off skin and mash grilled eggplants.
2. Pre-heat oven to 190°C.
3. Combine beaten eggs with milk and mashed eggplant. Season with salt and pepper. Set aside.
4. In a stainless steel pan or skillet, sauté onion with ground beef. (*Note: Ground beef is totally optional, there just happened to be some leftover, which, is the essence of a frittata: Putting together in a baked egg dish the ingredients that you already have.)
5. Add in eggplant-egg-milk mixture and stir to even it out in the pan. Arrange broccoli florets and bell pepper strips on top. Bake for about 15 minutes at 190°C or until top and sides of the dish brown and develop a crust. Top with grated cheese and bake for another 5 minutes at 200°C or until the cheese has melted.
Tip: You can get creative in changing the vegetables and proteins, depending on what you have or what you prefer to add in, as long as they balance with the egg and milk mixture.
*Any baking dish may be used for a frittata. Simply arrange your mixture from the sauté pan onto the baking dish.
