Tuna Puttanesca ala Vodka Sauce

MANILA, Philippines — Stuck to the usual sweet spaghetti with hotdogs? While kids may be contented with it and regard it as a celebration food all the time, adults will surely, at one time or another, look for pasta dishes that deviate from the usual Filipino spaghetti as we know it.
Rightly so, because pasta dishes have been designed to fall under different major categories — tomato based, cream-based, and olive oil-based — and, yes, you can have pasta with fish and seafood or vegetables, too.
This recipe, developed by Chef Jackie Ang Po for Doña Elena, which offers olive oil, canned tuna, anchovies, tomatoes, olives, and capers, just might be the answer to your pasta craving. And since its ingredients include vodka, or white wine if you prefer it, you can also "drink" while you eat your pasta. It gives a different depth in taste to the pasta dish.
Ingredients:
2 cans Doña Elena Tuna in Oil, Spicy
5 cloves garlic, minced
100 grams Doña Elena Black Olives
100 grams Doña Elena Green Olives
2 tbsps. Doña Elena Olive Oil
1 can Dona Elena Tuna in Oil
1 pc. big onion
4 cloves garlic
70 grams tomato paste
1/4 cup vodka or white wine
1 1/2 cups canned Doña Elena Tomatoes, crushed
1 cup chicken stock
2 tsps. salt
1/2 tsp, pepper
1 tbsp, sugar
1 cup cream
1/3 cup Parmesan cheese
2 tbsps. butter
500 grams Doña Elena Fettucine
Procedure:
1. Sauté together spicy tuna, garlic and olives. Season and set aside.
2. To make vodka sauce, sauté onion and garlic in olive oil, then add tuna. Add tomato paste and stir for 1 minute. Deglaze with vodka. Add canned tomatoes and pour in chicken stock. Season with salt, pepper, and sugar.
3. Once reduced, add cream, cheese, and butter. Adjust seasoning as needed.
4. Cook pasta according to package instructions. Drain.
5. Plate pasta and ladle vodka sauce over it. Or fold vodka sauce into the pasta before plating.
*Serves 5 to 6.
