Gene's Margarita Magic

MANILA, Philippines — Among party-goers, Margarita is a big favorite among cocktail drinks. A classic cocktail that usually consists of tequila, triple sec and lime juice, it is served in a long-stemmed margarita glass with salt on the rim. These days, it comes in different flavor variations, thus making it even more interesting.

Recognizing the popularity of Margarita, Chef Gene Gonzalez included it in "Tropical Cocktails: Exciting Bar Drinks for an Endless Summer," his book published by Anvil Publishing Inc. He classified it under the Party Pavers chapter, which features drinks “designed for effortless enjoyment, perfectly sized for socializing, and easy to replenish when the mood calls for another round.”

Chef Gene shares two recipes of Margaritas — Gene’s Margarita Magic, which is actually a lime margarita with an afterglow on the plate as front, mid and back flavors emerge to create complexity), and Lychee Margarita (which has a touch of almond syrup that elevates and completes the drink).

Gene’s Margarita Magic

Ingredients:

1 jigger (45ml. or 1.5oz.) tequila

1/2 jigger (22ml. or 0.75oz.) Manille Liqueur de Calamansi

1/2 jigger calamansi juice

1 bar spoon (5ml.) Alizé Gold Passion or passionfruit liqueur

1/2 bar spoon (2.5ml.) simple syrup

Procedure:

1. Blend all ingredients together with ice on high speed.

2. Pour into a salt-rimmed 10oz. margarita glass.

3. Garnish with a calamansi or a lime or lemon wedge. Enjoy!

Lychee Margarita

Lychee Margarita

Ingredients:

1 jigger (45 ml. or 1.5oz.) tequila

1/4 jigger (11 ml. or. 0.4oz.) almond syrup

3 pcs. lychees

1 jigger (45 ml. or 1.5oz.) lychee-flavored syrup

1/2 jigger (22ml. or 0.75oz.) sour mix or sour syrup

1 1/2 scoops crushed ice

Procedure:

1. Mix all ingredients together.

2. Pour into a salt-rimmed martini, margarita or cocktail glass.

3. Garnish with lychee kebab. Enjoy!
