MANILA, Philippines — For noodle lovers, Pancit Palabok is usually a big favorite because its taste is very Filipino.
This noodle dish with a shrimp-based sauce may sometimes seem daunting to make because it requires many ingredients but once they have been prepped, it should be easy to assemble.
Let the chefs of Jolly Heart Mate Canola Oil show just how easy it can be to make your own Pancit Palabok with these simple steps.
Pancit Palabok
Ingredients:
500 grams rice noodles (bihon)
For the sauce:
Jolly Heart Mate Canola Oil
1/2 lb. ground pork
1 tbsp. annatto powder
3 cups pork broth
1 pc. shrimp bouillon
6 tbsps. all-purpose flour
2 tbsps. fish sauce
1/2 tsp. ground black pepper
For the toppings:
1 cup pork belly, boiled and sliced thinly
4 oz. firm tofu, fried and sliced into cubes
1/2 cup tinapa flakes (smoked fish)
1/2 cup chicharon, pounded (optional)
2 hard-boiled eggs, sliced
1/2 cup cooked shrimps, boiled or steamed
1/4 cup green onion (scallions), finely chopped
3 tbsps. toasted garlic
2 pcs. lemon, sliced (or 6 pcs. calamansi)
Procedure:
1. Soak bihon noodles in water for 15 minutes, drain, and set aside. Make the sauce. In a pan, heat Jolly Heart Mate Canola Oil. Sauté ground pork in the hot oil for 5 to 7 minutes. Dissolve annatto powder in pork broth and pour it into the pan. Add shrimp bouillon, stir, and simmer for 3 minutes.
2. Gradually add flour while stirring. Season with fish sauce and pepper, and cook until sauce thickens.
3. Boil water and briefly dip the bihon, which should be contained in a strainer, for 1 minute. Drain completely.
4. Transfer noodles to a serving plate or platter, pour the sauce over the noodles, arrange the toppings over it, and serve with sliced lemon or calamansi.
