MANILA, Philippines — If you like Sisig but you are trying to cut down on your red meat intake, there is a way to still enjoy good Sisig when you’re craving for it.

Replace pork with chicken and add potatoes, which will enhance the flavor and add more texture to your dish. And since you’re on a quest for lighter and healthier eats, choose the all-white-meat breast part of the chicken. There is also a choice to use either Greek yogurt or light mayonnaise. Try your best to get Greek yogurt from the supermarket because it is good for the gut.

Potato Chicken Sisig

Ingredients:

500 grams U.S. Frozen Sidewinder Fries

3 pcs. medium chicken beasts

2 pcs. small green chilies, chopped

3 tbsps. soy sauce

2 pcs. medium red onion, chopped

2 tbsps. Greek yogurt or light mayonnaise

1 tbsp. lemon juice

Salt and pepper

Canola oil

Procedure:

1. Air-fry the frozen sidewinder fries at 400°F (200°C) for 12 to 15 minutes or until golden brown. Set aside.

2. Season chicken breasts with salt and pepper.

3. Heat pan, add some canola oil, then pan-fry chicken breasts. Set aside to rest.

4. Slice rested chicken breasts into small cubes.

5. Heat pan again and add some canola oil. Then sauté chicken breasts and green chilies for 30 seconds.

6. Add soy sauce and onion. Do not over-fry the onion.

7. Turn off heat, then stir in Greek yogurt or light mayonnaise. Add lemon juice and air-fried sidewinder fries. Season with salt and pepper.

8. Serve with lemon wedges or calamansi halves, minced onion, and minced chilies on the side.
