Smash Chori Burger with Secret Sauce on U.S. Hash Browns

MANILA, Philippines —Chori Burgers, or chorizo patties cooked and served on buns just like burgers, stand strong against the pure beef patties that we knew hamburgers to be.
This is because the ground chorizo adds a deeper and more flavorful character to the ground beef burger, which is why Chori Burgers are such a hit wherever you take them — from the white-sand beaches of Boracay to the food carts and chic joints of the Metro Manila concrete jungle.
Always a hit among the young crowds, burgers transform with time and trends. Now the clean layered look does not matter as much as the rugged way they are cooked. Love them smashed before being cooked!
Chef Jackie Ang Po even adds a “secret” sauce to make Chori Burger even more juicy and delicious. She showed how to make the sauce in a demonstration held in connection with the World Food Expo (WOFEX) 2025 held at the World Trade Center.
Smash Chori Burger with Secret Sauce on U.S. Hash Browns
Ingredients:
140 grams chori burger
Cheese slices
1 sunny side up egg
2 pcs. Simplot Traditional Potatoes - Hash Brown Patties
60 ml. secret sauce*
Parsley for garnish
*For the Secret Sauce:
12 grams garlic, minced
65 grams mayonnaise
10 grams horseradish
35 grams ketchup
1 gram salt
5 grams sugar
5 ml. lemon juice
1 pinch cayenne pepper
Procedure:
1. Cook ready-to-cook chori burger on a cast-iron pan, smash burger style. This means smashing the burger patty until it is thin and roughly spread out. Cook for a few minutes, then flip and cook the other side. Remove and set aside.
2. Fry the Simplot Traditional Potatoes - Hash Brown Patties until golden. Set aside.
3. Mix everything for the sauce.
4. Assemble the burger by placing the patty between hash-browns. Layer with cheese and egg. Smother patty area with sauce or serve on the side. Garnish with parsley.
