Ampalaya con Sotanghon

MANILA, Philippines — Love ampalaya (bittergourd) but you sometimes wish you can enjoy it in a different way? Instead of the usual Ginisang Ampalaya with Egg all the time, why not deviate from the ordinary and cook it with sotanghon (vermicelli) instead?
It will still have eggs in it, but the noodles will give it a different flavor and texture so that you will be eating something familiar yet new at the same time.
This Ampalaya con Sotanghon recipe from Mama Sita’s recently released "Easy Vegetarian Recipes" cookbooklet might come in handy the next time you find yourself craving for ampalaya.
Ampalaya con Sotanghon
Ingredients:
2 tbsps. cooking oil
4 cloves garlic, crushed
1 pc. onion, sliced
3 pcs. tomatoes, chopped
1 pc. ampalaya, rinsed, seeded and sliced
1 pack (40 grams) Mama Sita’s Pansit Bihon Mix
2 cups water
2 small bundles (80 grams) sotanghon noodles
3 eggs, slightly beaten
Procedure:
1. Sauté garlic, onion and tomatoes in cooking oil.
2. When onions are soft, stir in ampalaya and Mama Sita’s Pansit Bihon Mix. Cover and continue cooking for 5 minutes.
3. Remove lid, pour in water, and bring to a boil.
4. Mix in sotanghon noodles and beaten eggs. Continue cooking until noodles are tender.
5. Remove from heat and serve.
