MANILA, Philippines — Aika Robredo’s wedding details are turning out to be memorable, with the revelation that the late celebrated chef Margarita “Gaita” Fores curated the menu at her reception. 

The daughter of former vice president Leni Robredo married Jim Guzman on December 29. 

The lovely bride paid tribute to her late father, former Department of Interior and Local Government secretary Jesse Robredo, by incorporating his barongs in her wedding gown. Jo Rubio made the hand-sewn piña wedding gown. 

In another tribute to a respected icon like her father, Aika tapped Fores, named Asia’s Best Female Chef in 2016, to curate a Filipino menu as seen in her Instagram story today.

Guests were treated to a fusion of Filipino and Italian flavors, as expected from the Italy-trained Fores. 

Fores chose to serve Organic Mushroom Binakol as soup, while the Pako Salad (fiddlehead fern) was drizzled with Dalandan Vinaigrette. 

The pasta selection was a Spaghettini in Parmigiano-Reggiano Wheel Toss featuring Tagaytay Tomatoes and Ilocos Longganisa. 

Philippine Seabass “Apahap” wrapped in banana served as the main. The other proteins in the carving stations are Lechon, Sisig, and Beef Tenderloin Tagliata. 

Dessert similarly fuses Filipino sweets with Italian flavors with selections, namely, Parmigiano-Reggiano Cassava Cake and Pastillas-Chocolate Ganache. 

“This menu was thoughtfully curated by the late Margarita Fores, whose legacy of love and flavor lives on in every bite,” read the description of Aika’s wedding menu. 

Fores died on February 11, 2025 due to cardiac arrest. She was in Hong Kong for a stopover after a trip from Morrocco and Madrid. 

The chef was behind several food concepts, notably the Cibo chain of restaurants.
